PRIVILEGE CAVIAR is harvested from a small batch of Transmontanus (White) sturgeon farmed in northern Italy. The eggs are a (c2.7mm) and are very black in color. The egg definition is excellent, both on the eye and in the mouth. It full of flavour, which does linger on the palate, with no trace of bitterness. Needless to say, it’s a remarkably good caviar.
